Fining Agents
Fining is an important step in ensuring the quality and stability of a wine and is accomplished by adding a fining agent that bonds with undesirable compounds in the wine, forming clumps that can then be filtered out.
With any fining process, winemakers must balance the removal of negative characteristics with the inevitable removal of positive ones. This is especially true pre-fermentation, before the yeast does its job of driving and setting style, but preventative adjustments pre-fermentation can significantly
reduce the need for future intervention and help avoid issues such as protein instability, astringency, off-aromas, and unwanted color.
