Yeast Derivatives
Among the fundamental needs of yeast for its growth and survival (i.e., unsaturated lipids and sterols, vitamins, minerals, and available amino nitrogen) most can be supplied naturally through yeast-derived functional products. Yeast-derived functional products are highly technical products created by inactivating living yeast cells and then isolating and purifying their components. In addition to yeast nutrition, yeast-derived functional products can also be used for a wide range of winemaking applications such as anti-oxidation, clarification, color stabilization, improving mouthfeel and roundness, mimicking the effect of aging on lees, and tartrate stability.
