Acid protease enzyme designed to reduce protein instability and improve wine clarity, filtration, and long-term stability in white and rosé wine.

Product Specs

NATURASE® AP 2X is a highly concentrated acid protease produced from a selected strain of Aspergillus niger.  It hydrolyzes unstable proteins present in musts and wines, helping prevent protein-related instabilities such as chill haze while improving wine clarity and stability.

  • Specifically developed for activity at low pH
  • Broad temperature activity range from 10–65 °C
  • Can improve process efficiency by enhancing viscosity reduction and filtration performance

Application: Recommended for white and rosé wine production and other applications where protein stabilization is required.
