Tartaric acid, also known as dihydroxysuccinic acid, is a natural product derived from winemaking by-products (wine lees, raw tartar and bitartrates). Food-grade tartaric acid has a variety of uses in food and beverage production. It is used as an acidulant and flavoring to provide tartness to juices, candy, and other food products. Winemakers can use it for pH adjustment. It is also used in the production of cream of tartar, effervescent beverages, baking powder, and fruit esters.
