Also known as potash or pearl ash.   Potassium carbonate is a white salt, soluble in water which forms a strongly alkaline solution.   In cuisine, potassium carbonate is used as an ingredient in some Asian dishes, used in the production of cocoa powder to balance the pH of natural cocoa beans and help enhance the aroma, known as “Dutching” or Dutch processed cocoa.   In the production of wine or Juice it is used for de-acidification.  In addition using potassium carbonate has the least detrimental effect on the sensory characteristics of the wine.   Potassium Carbonate is also used for the softening of hard water.
