Monosodium glutamate is a flavor enhancer commonly added to Chinese food, frozen foods, canned vegetables, spice mixes, soups and processed meats to intensify savory flavors and aroma. MSG is derived from the sodium salt of glutamic acid, one of the most abundant naturally occurring non-essential amino acids. Glutamate is found in nearly all foods, especially high protein foods such as dairy products, meat and fish and in many vegetables.
