Bentonite KWK is a great general-purpose fining agent that is easy to prepare and does not adversely affect flavor. It is especially effective in correcting protein instability and preventing cloudiness. It does not remove tannins, so nothing else has to be used in conjunction with it. Should be rehydrated in hot water stirred thoroughly until dissolved.
- Used for the removal of unstable proteins in wine, juice, and cider.
- Negatively charged clay colloid that reacts with positively charged proteins, precipitating them from the beverage.
- Fine granular sodium bentonite with an average particle size between 20 and 70 mesh.
- Other names: Volclay KWK Food Grade.
Application: At any stage during the production process.
