Also known as Tri-sodium citrate, sodium citrate is the sodium salt of citric acid. Like citric acid, it has a sour taste as well as like other salts a salty taste. It is commonly used as a food additive, usually for flavor or as a preservative. It’s what gives club soda both its sour and salty flavors. Sodium citrate can be used as an emulsifier for oils when making cheese but allowing the cheeses to melt without becoming greasy. In addition, sodium citrate is used as an antioxidant in food as well as a sequestrant. It dissolves easily and acts instantaneously.
