Acid-stable endo-exo protease developed from a non-GMO strain of Aspergillus niger to prevent haze formation caused by the association of proteins and phenolics during cold storage (“chill haze”). Helps increase shelf-life, improves clarity, and positively affects foam stability. Can be used to reduce or replace your traditional stabilizers for a more “natural” approach to stabilization.
