Acid-stable endo-exo protease developed from a non-GMO strain of Aspergillus niger to prevent haze formation caused by the association of proteins and phenolics during cold storage (“chill haze”). Helps increase shelf-life, improves clarity, and positively affects foam stability. Can be used to reduce or replace your traditional stabilizers for a more “natural” approach to stabilization.
- Active at 0–20oC
- Deactivated during pasteurization 62–75oC.*
- Little to no affect on foam or flavor.
- Non-GMO, vegan-friendly, and kosher.
*Optimization of PUs (Pastuerization Units) needed to inactivate the enzyme recommended.
Application: Add at 1–4 mL/hL in cooler temperatures such as during fermentation, maturation, or later in the bright beer tank before bottling.
Packaging: 1 kg, 5 kg, 25 kg
Figure 1 — Deltabrew® Pure dosage-dependent stability** (according to MEBAK II 18.104.22.168) and foam stability** (according to MEBAK II 2.18.4) of an unstabilized, unfiltered/cloudy beer. Stability of the beer increases linearly with the dosage. Addition of Deltabrew® Pure has no negative effect on foam stability.
