  • Cream of Tartar

    Also known as Potassium Bitartrate or Potassium Acid Tartrate;   Cream of Tartar is a white crystal or powder and a byproduct of the winemaking process as it forms inside wine barrels during fermentation.  It comes from tartaric acid, a naturally occurring substance in grapes and some other tart fruits.   Cream of Tartar has many culinary applications such as stabilizing egg whites and increasing their heat tolerance and volume, stabilizing whip cream thereby maintaining its texture and volume, preventing sugar syrups from crystallizing and reducing discoloration of boiled vegetables.   Additionally it is used as the acid ingredient along with sodium bicarbonate (aka baking soda) to formulate baking powder.

  • Potassium Carbonate

    Also known as potash or pearl ash.   Potassium carbonate is a white salt, soluble in water which forms a strongly alkaline solution.   In cuisine, potassium carbonate is used as an ingredient in some Asian dishes, used in the production of cocoa powder to balance the pH of natural cocoa beans and help enhance the aroma, known as “Dutching” or Dutch processed cocoa.   In the production of wine or Juice it is used for de-acidification.  In addition using potassium carbonate has the least detrimental effect on the sensory characteristics of the wine.   Potassium Carbonate is also used for the softening of hard water.

    Also known as Potassium Sodium Tartrate is a double salt first prepared by an apothecary, Pierre Seignette, of La Rochelle, France is about 1675.   Rochelle Salt is a colorless to blue-white salt and has a saline cooling taste.     Rochelle salt is most commonly used in the production of cheeses, jellies and fruit bitters and as a buffering agent in the cosmetics industry.

    Also known as Sodium Carbonate or Calcined Soda.   Soda Ash is the sodium salt of Carbonic Acid and is well known as an everyday water softener.   Soda Ash has many domestic uses for light cleaning such as removal of grease, oil or wine stains.  Also used as a descaling agent in boilers such as those found in coffee pots and espresso machines.    Soda Ash as a food additive is used as an acidity regulator, anti-caking agent, raising agent and stabilizer.

  • Sodium Citrate

    Also known as Tri-sodium citrate, sodium citrate is the sodium salt of citric acid.  Like citric acid, it has a sour taste as well as like other salts a salty taste.  It is commonly used as a food additive, usually for flavor or as a preservative.    It's what gives club soda both its sour and salty flavors. Sodium citrate can be used as an emulsifier for oils when making cheese but allowing the cheeses to melt without becoming greasy.    In addition, sodium citrate is used as an antioxidant in food as well as a sequestrant. It dissolves easily and acts instantaneously.
